There's no real guarantee that replacing bits of your body with cybernetic parts is a total hedge against aging. Furthermore if this new dispute between, synths, cybernetics, and transferring consciousness may provide a reasonable explanation for why weyland didn't go down the cybernetics pathway, he was already trying to sort of recreate himself with david. Stands to reason he simply didn't agree with the idea of becoming a cyborg, or that he was looking for a way to restore his actual biology by learning from the space jockeys. I wouldn't call this a plot hole imo.
