Ruminants eat grass from the ground, dogs eat other animal's shit, virtually all animals eat small critters raw if they get the chance. There are videos of horses and deer eating birds, for example.
Human food is better sourced and controlled, and usually cooked.
Testing for parasites is still possible. You would expect most humans to notice if they have worms, and seek treatment.
One could argue that there should be more testing and awareness. Medicine always comes with a risk and isn't taken without reason because of that.
