If I had to bet, we'll see Latinos as a whole reclassified as White sooner or later. **Keep in mind that races in the American context are arbitrary social constructs and can be modified as desired.**
As for why this will happen? American racial dynamics are dominated by the divide/conflict between Whites and Blacks, and plenty of groups have an interest in maintaining that sort of setup. If the day comes that Whites are no longer a majority, the lines will be redrawn so that they will be majority once more.
