when civilizations were forming after the glaciers retreated, "pigs" were wild man eating top of the food chain menaces. by the time any were domesticated, they were generally used for waste disposal. of course nobody should eat animals that have been forced down the food chain to complete scavenger status.
By Christ's time many people had figured out that if you keep the pigs clean and cook the meat properly you are safe. The Roman Empire was proof positive that old ways which had been tested and worked out since those prohibitions could safely be dumped as relics of the past.
