But, I was never outright taught parts were missing, despite 12 years of an good, open-minded, Roman Catholic education.
However, when I was actively reading certain texts in the Nag Hammadi years back, it most often seemed that the CRUX of any tract contained blank spots that would have 'sealed' a matter, or answer a question...like this:
>Why did yo do this? I did it because ______.
>What must I do to ________.All you need do is_________ .
Poor examples, perhaps, but, I sensed that what was missing seemed purposely omited. Still, I seemed to feel I was able to fill in blanks more times than not, as if something within me was reading...that knew. Faulty, unproven, but, comfy as if understood...meaning, not really left wanting.
As for the pickings and choosing that Nicene, (or earlier-I forget) settled on a few hundred years later, I think the esoteric nature of many of the so-called lost books have hints of gnostic and other beliefs that just didn't 'fit' the cohesion that Rome hoped to craft, along with outright passages that didn't fit the Christ narrative.
All I know is that I was led to look beyond common knowledge, so I kept listening.

If you know of a book that discusses the missing grammar and twistings, I hope you'll clue me in.
