>>13056373I do when I have the time. If I'm feeling lazy, I make Ciabatta because it's a no kneed bread and only requires one proofing (goes great with a Carbonara, which I also make from scratch). If I feel like putting in the effort, I'll do a Ploughman's Loaf, or at Christmas time I'll make a Brioche that I use for a Summer Berry Pudding.
I always use fresh yeast because the flavour is better than using the dry stuff in my opinion, and I always proof it first to make sure it's alive; nothing worse than spending hours making a loaf and it hasn't worked after all that.
