You don't even really notice them usually since they're so small. As for the eyes, generally you don't find the sardines with the heads still on. Even the cans labelled as being 'whole sardines' are just the body of the fish. My suggestion is to make a sandwich with white bread, butter, a layer of sardines, sliced cucumber, and hot sauce of your choice. I like a somewhat mild chipotle pepper sauce. It's delicious, nutritious and cheap.
