I have 1 doe already in the freezer, but deer meat is a gift that people generally don't say no to, and appreciate. I like to get a few of them. I'd like to know some more recipes, if you've got them. Obviously, mixing 50/50 with sweet italian sausage, ground hazelnuts, and "kibbled" mushrooms, before mixing in some tomato paste and jarred sauce for spaghetti is one of my favorites. Also, When I order "Jerky Cut" from my local place, they make perfect little logs of meat. I sear all sides in bacon fat, and then put it in foil with the usual salt/pepper/garlic, plus some mushroom powder and A1 (the best steak sauce). I seal it up and put it in the toaster oven low and slow... about 230F, for 50 minutes or so. Then I slice it for the most tender, delicious, prime rib-like steaks. It doesn't have the coarseness and blubber of prime rib, because deer is so lean, but it's Med-rare pink all through the middle and cooked like souse vied.
