There are a whole lot of good ones, my install has 160 or so now, but, the biggest ones you can find by just sorting by most downloaded from the ModDB page.
You can also just download a modpack that has a lot of stuff set up so you don't have to bother, but, I like having my own better.
Anyhow, you should play the vanilla first anyway, and see if you like that, then delve into spicing it up with more stuff, add-ons are really easy to set up, anyway. Maybe install FDDA, because it's no harm. And optionally weapon stuff, like re-animations or new packs of them
