you know how the universe was pretty hot after the big bang and then cooled down? it's the same as forming a gel from a chemist's viewpoint. you heat some powder in a solvent, it dissolves above a certain temperature, then upon cooling down it forms a self-assembled network AKA a gel (imagine making jelly). if you look at it under an electron microscope, it then often looks like your picture of the universe or pic related from a random google search (there's hundreds of publications with pictures like this)
