They were left in a big pit with "some" food and water, not literally buried alive. Also the guy that banged her would be flogged and executed as well, so this wasn't just a Roman thot patrol. From their point of view, the crime was that intercession with the goddess Vesta was vital for Rome not to fall to barbarians, and she was a virgin goddess so this could only be done correctly by virgin priestesses.
