The deal is, there are different kinds of infinities, and monkeys and typewriters are not good enough random character generators to ever produce a sequence with the complexity of Hamlet. The set containing all theoretically possible stuff the monkeys could do might, but this set would also contain the set that contains the what an infinite number of monkey could practically do, which would not contain Hamlet, but would be infinite.
Back to the anons throwing fish across the channel, we can say that in a sense theoretically, it might be the case that a flung fish will end up anywhere, and imagine an set of locations that the fish could theoretically land, and it could be infinitely large and include everywhere. But then there would also be the set of actual fish thrown by real anons, and this set too would be infinitely large, but none of the fish would be in France.
