Meat itself is nice in the broth but not necessary. After a long time of cooking it becomes entirely tasteless and has to be filtered out with the bones, as it has given all the flavour into the liquid. Quartered onions (with peel), celery, carrots, pepper corns and bay leaf for extra brothiness.
