For market, I live in an area where the big town is 100k people with the same population being an hour in any direction. Closest big market is 2 hours away and any pretty specialty crops that are sent this direction are expensive for chefs. We project about 2/3rds of the garden space will be used for chefs with almost all of the kratky stuff also due to it being able to be year round. Competition is nearly 0 here for what we are looking to do, and, because this is primarily being used to offset our food costs, the investment to do this is nearly 0. We may do a CSA but it would be more like come pickup your $20 grocery bag of veggies for the week. Nothing fancy.
I project I'll make $15,000 profit in the first year and will move to $25,000 the second and $30,000 the third with the land space capping out at a maximum of $50,000 if everything goes perfectly. But that's just excel math. By watching our farmers markets here, we know that about 45% of the money we make will be from lettuce, spinach, and kale. So, we are adjusting appropriately.
We do plan on growing tomatoes and strawberries but the big concern with them is that we would need a greenhouse and the winds where we live prohibit the inexpensive options. We may end up adapting our living space for it if profit potentials are high enough.
