>>20973968You don't have to make your own specialty cheeses, nobody's expecting you to get heavily invested in this shit. Ricotta and mozzarella are literally the easiest cheeses you can make at home, it only takes half an hour, a pot, and a couple basic ingredients.
The reason to do it is the same reason for making your own bread, for instance. Once you've experienced biting into a steaming hot slice of homemade bread, or some fresh and still-warm mozzarella, the store-bought versions pale in comparison. I hate baking so I use a bread machine; takes me 4 minutes to throw everything into the pan in the evening, and when I wake up I have fresh bread ready to go. It's not the nicest loaf and it goes stale fast because no preservatives, but it's dirt cheap and beats the everliving shit out of store-bought bread.
