Pic related is the dish I just made, Tomatsild.
Make a pickle brine from a little water, a tasty amount of sugar and a few spoons of vinegar. Should be deliciously sour and sweet.
Add spices to taste, pepper, dill, cloves, mustard seed are traditional ones.
Add a few tablespoons of olive oil, and a bunch of tomato paste. Stir even.
Then add salted herring that has been diluted in water for a few hours. Cut the fish into strips a little less then a inch wide.
And add a chopped onion, preferably red.
Mix it all and refrigerate, taste keeps improving for several days so be patient. Keeps for 2-3 weeks in the fridge( but it wont last that long believe me).
