My Knödel recipe:
>leftover mashed potatoes>leftover sauce (whatever it is)>potato flour in cold water>enough eggs, seriously more than you even think you need>a dash of saltMix everything together with a spatula.
With a large spoon, take a portion of the dough and lay it in a boiling water. If it sticks together and doesn't spread out, well, you have genuinely made a knödel (or dumpling).
