you can't selectively breed something that doesn't exist.
if your sons/daughters are 1/2 mutt, if you breed your daughters, your incest babies will be 3/4ths mutt.
then selectively breed for the best genes/purest genetics possible till you create your own sub-race
this is what anyone would do in order to bring a species back from extinction, breed the purebred animal with one of it's offspring or the closest living relative/species, then breed the offspring till the population is in large enough numbers, THEN selectively breed to weed out the dross and bring out the gold.
otherwise the animal goes extinct
a little mutt mixing isn't bad, and some wincest is permissible.
