Many mushrooms preserve beautifully well by drying them, and will last for years in a sealed jar with a silica-gel pouch to absorb humidity.
These are king boletes (porcini) from Colorado a couple of summers ago. About 600 pounds when fresh, but dried to about 50 lbs. Should keep the whole family fed with mushrooms for a couple of years.
