If the Sun itself were moving over the Earth, it would appear to speed up as it flew overhead and then slow down as the angle between the Sun and the observer becomes more acute.
The fact that the speed of the Sun remains uniform indicates the the distance from the observer does not change. It can only be explained by a model where the Earth revolves around the Sun at a constant distance.
All you have to do is open your eyes and apply a little critical thought to see the flaws in the flat earth model.
