You look back at medieval people and sure, they had a high carb intake but they were also working constantly. It makes sense to load up on carbs if you're pulling a plough manually and doing labor all day, yet even then their intake was actually lower than the average sedentary American today.
Here's an example. The Aztecs had a peculiar cultural habit of recording exactly how much each person in a family was allowed to eat every day, sorted by order of birth, role in the household, etc. An adult Aztec man ate four of what we now call tortillas a day. It isn't clear what else he ate, but we're talking four pieces of flatbread. Not burritos. Just the fucking corn patty, that was the staple.
Four tortillas. That's what a hard working adult male farmer was expected to eat in a DAY. Eldest son got three tortillas, second eldest got three also, the younger sons got two each. This is not a lot of food. Meanwhile you open a bottle of coke and chug it, you've just gotten half of the head of house's daily intake of calories. Soda is the fucking enemy. Beer is just as bad.
