It's the same enzyme that occurs on apple peels, when you drop an apple, the spot that touched the ground will turn brown within 30 minutes and liquify. This is essentially what it does to the cell structure of any fruit, liquifying its constituents so you're only left with a small amount of insoluble matter.
For fermentation we use these, they are called dame-jeanne here. I have seen people use big plastic water bottles too, but glass is to be prefered. And a waterlock, that allows for gas exchange, vents the CO2.
