https://www.youtube.com/watch?v=ExJ1-nQeZ68It's insane just how much fucking work is involved in making flour, not to mention how little flour you get per surface area of wheat. I realize it's important for staple crops to offer carbohydrates and protein (which most fruit and vegetables don't), but I don't understand why bread wasn't entirely replaced by easier crops such as soybeans or potatoes after the columbian exchange. Granted few offer the energy and protein that wheat offers (per unit of weight), but they're just so much easier to grow.
