In normal times the percent calories or weight of pufa (can't remember which) in the diet is very low around 1 or 2 percent. Today there is no way you could be deficient in pufa. You don't have to worry about it. There is far too much of it in our diet. It is hard to avoid it!

Your goal should be to eat mostly saturated fat and minimize unsaturated fats, but if you are eating more than 50% saturated fats (animal fats, dairy, coconut pretty much) you are going to be healthy basically.
