lots of textures and flavors and colors that nicely compliment each other. they used to use feta but i talked them into using goat cheese two years ago since its not really that much more expensive but so much better.
malt vinegar is also just slightly drizzled on top of fries, the acidity and sweetness is a nice compliment. if you drown the potatoes in the vinegar it will definitely be unpleasant.
goat cheese is also one of my favorite foods ever.
