for this dough I've been using these measurements, just made it bit different:
mix ingredients -> mix with spatula (under a minute, I'm lazy) -> let it rest for ~ half an hour, to let flour hydrate for easier kneading later on -> knead for maybe 2-3 minutes -> either leave on a table for few hours, or throw in the fridge for 1-4 days
and I do the same - grate some cheese, throw something from the fridge on top - turns out quite nice
