Once you have the fizzy yeast water, put some flour in, mix it up a bit with a spoon, then put some cold water and hopefully the water will be about room temperature. You want it to be about room temperature, because the yeast likes it hot, but the dough is hard to knead unless it's cold because it gets too sticky.
Once you've added some cold water and a bit more flour, go ahead and knead it up for a while until it's not sticky enough to stick to your fingers any more and you can stretch it a good bit without it tearing. Then, cover it up again and leave it in the bowl for a bit so that the yeast can do its thing a little.
