You could get hemoglobin through animal blood - which was readily available in medieval times, and the kosher rule that animal flesh must be drained of blood before consumption meant that Jews would have a reliable source of blood they could divert WITHOUT having to take the risks of human sacrifice.
If you look at these stories, a lot of them are poorly substantiated or rely on confessions under torture.
If you look at the Der Sturmer versions, leaving aside the obvious political benefit, you notice that the Gladbeck story mentions
