The French themselves are a mix of Gallic, Italian, and Germanic ethnic groups. Likewise the Han Chinese aren't a single ethnic group either, and are composed of a larger number of smaller ethnic groups. You claim that nationality is a paper, but "ethnic groups" are likewise arbitrary and a social construct, it all depends on who you group in with yourself. But that's irrelevant to the point that it's not how national teams work, the players are of French nationality, they have French citizenship.
