It got absorbed into Christianity quite heavily but was still around in rural areas past 1000 AD. For example in Greece they still sacrificed goats at churches in an act called "Kourbania". Its still done today and was done frequently until the 1970s. In western Germanic areas they still placed bread at crossroads or in the wilds for votive offerings or had prayers/hymns that they still used and had to specifically be outlawed. Things like the maypole, fire-hopping, placing offerings at crossroads and an execution method, hanging, were all part of pagan ritual and rite.
