For ethnic European lurkers:
Ancestral European religions were simple: the polytheistic deities are allegorical personifications of natural forces (numen/animism) and the cosmology is pantheism/pandeism/panentheism.
Basically, pantheism/pandeism/panentheism with ancestor worship (similar to Japanese Shintoism).
Rituals are about manifesting the deities into your daily life. See: Eleusinian Mysteries.
Also note that "Pagan" is a slur invented by the catholic church to apply to every non-xtian religion. "Heathenry" is another slur invented by the catholic church to apply specifically to non-xtian Germanic religions ("Asatru" is one of the religions that fall under this term). Fyrnsidu is Brittonic Paganism. Druidry is Celtic Paganism. Hellenism is Greek Paganism. Religio Romana is Roman Paganism. Rodnovery is Slavic Paganism. Romuva is Baltic Paganism, etc.
