i ate a medium rare beef steak in america. and it was good, but it just tasted like a well done pork steak. beef is tough while pork is more fatty so it's understandable they'd want to keep beef rawer.
not sure what you'd get out of medium rare pork but i can't imagine it's good. you probably won't get any diseases because of the eu control on the meat, but i don't see how it can taste good.
