Start looking online or go to a farmers market and talk to the meat sellers for cow shares - 1/8, 1/4, 1/2, whole, etc. Nowadays the farmer will contract with a butcher to offer a turnkey product - you get an estimated list of cuts, prepackaged, at a price per pound for everything. If you're buying a whole cow, or even a half, you can customize some of the cuts - say getting an arm roast instead of flat iron steaks, or T-bones/porterhouses instead of filets and NY strips from the short loin. Make sure it's grass fed fully, not just grass finished, and if you want to be an annoying liberal faggot ask if they're grazed on annual grass or perennial grass - perennial grasses have deeper roots and the meat has more vitamins and minerals because of this. Annuals are just that, planted for the season then the excess harvested for the winter, and don't have as many minerals. Also ask for fat and render tallow, it will keep on a dark shelf all year.
