So I let it ferment at room temp for between 12-14 hours and then shape it and let it proof for a 40 mins while the oven is pre heating.
Sometimes I leave it in the fridge for 2 days to cold ferment like picrel but I would suggest to master the easy recipe first and than move to more advanced couple day cold fermentation.
