56% means 56% of people are white, not mixed. For instance, the state's of North and South Dakota were settled by German immigrants in the late 1800s.
To this day the populations of those states are descended from the original immigrants with very little to no outside influence.
Most states were settled by differing populations, or majority populations from one European country or another. An example of this would be Utah, which to this day is primarily comprised of English descended Mormon immigrants.
