So now, we are going to flip our chops!
Flip them and COVER them in the skillet and turn the heat down to low.
This will create a wonderful crust on that side to match the sear on top, and also allow the chops to cook completely!
Keep them covered for about 6-12 minutes, checking at the 6 minute mark to see if they are at 145.
If they are not, check them every 2 minutes or so with a meat thermometer.
