looks really good man, I wouldnt worry about getting the 'crust' on it super even as long as it tastes good. I think in restuarant kitchens then usually use a horrifying amount of butter and baste it over the fish/meat to get browning as even as possible but this isn't really practical for home cooking and spatters everywhere.
