When I cover the frying pan with a lid the omelette inflates and becomes sort of airy and slippery
But when I don't, the lower part always gets cooked much faster than the higher one and burns out
No matter how much I practice, this is always the case. So now due to my constant fear of failure I have to retreat to making fried eggs or porridge, which I enjoy less than a well-cooked omelette
