It's spun up while on the ground to be as horizontal as possible so that later when the plane is in the air the artificial horizon works. If the plane was calibrated and then flown 1000 miles in a straight line it would create a hugely noticeable change in the gyro's orientation and the reason this isn't seen isn't because the gyro is constantly spun up while flying, it's because the relationship with the ground doesn't change.
