Like you said it's cheap, and it's also the most nutrient rich part of most animals.
I cook it by rinsing them first with water then coat in flour and cook them in butter with the onions.
I've heard that for people that don't like the taste of liver that you can soak them in milk for an hour to remove some of the livery flavor, but I like the flavor.
