Ingredients:
- 1 onion, diced
- 1 carrot, grated
- 3 cloves of garlic, crushed
- 2.5cm ginger, grated
- 2 tsps ground cumin
- 2 tsps ground coriander
- 1 tsp garam masala
- 1/2 tsps ground turmeric
- 1 tsp chili powder (optional)
- 250g red lentils (dry)
- 400g diced tomatoes
- 400g coconut milk
- 400g water
- lime juice (or any acid such as lemon juice, vinegar, yoghurt)
Instructions:
Fry onion and carrot in a pot until the onion is brown, add crushed ginger and garlic and fry for another minute.
Add ground coriander, cumin, garam masala, turmeric, and chilli powder and cook for 5 min. Add some water if they begin to stick
Add diced tomatoes, coconut milk, water, and dry lentils. Bring to a boil and simmer for 15 min or until the lentils are soft.
Add salt and lime juice to taste.
Serve with rice.
