Back then, portion sizes were smaller and there were fewer environmental pollutants disrupting our hormones in our food and drinking water. Not to mention our meat and dairy didn't have as many hormones and antibiotics in them as they do today. But, we decided to subsidize our agriculture industry by pushing bigger and bigger portions while ignoring environmental pollutants and pushing industrial scale farming practices so now we have an obesity epidemic.
At this point, the food itself isn't even the problem.
At this point, it's a mental health thing. People are using food as a drug to alter their moods. The only way you really tackle that on a grand scale is with a regime of mandatory medical mandates that make that addiction effectively non existent. Luckily, we have Antabuse for obesity, and that would be the GLP-1 class of drugs.
Just require all overweight people to be on these drugs to participate in polite society, and this problem starts going away.
Food companies will adjust by buying up pharmaceutical companies or something. Their profit margins will never really go away
