My go to is to marinate for 2 hours in Lemon, olive oil, garlic and fresh sprigs of thyme, then bake the chicken.
I like marinating my chicken because I find that the leftovers taste a lot better. Plain baked chicken has a funky taste I don't care for after just 1 day in the fridge. Marinating it in the lemon really helps stop that.
