The doors were installed post war, and even if they used wooden doors for executions...
People were tricked into the gas chambers believing that it was a normal shower. The gas would quickly kill them, really not leaving much time to register what's happening, let alone fight back against trained soldiers with guns.
Besides, a group of emaciated people were not going to overpower a door. Wooden or otherwise.
