I have had the mustard/vinegar Carolina style on pork and it is very good. Interestingly, there is a very well known BBQ joint in Texas called The Salt Lick. They serve all you can eat BBQ. It's pretty good, but not great, however; as far as I know, they are they only restaurant in Texas that serves a non-tomato based sauce. The lady that came up with it is Asian and it is vinegar and mustard based. Here is the Salt Lick's pit.
