Even IF you deluded yourself into thinking that could be true, you face other issues like looking at other ethnic groups like native siberians or inuit tribes who've always had traditional hunter gatherer diets up until modern times, and when introduced to modern sweets like chocolate, they had their first ever outbreaks of tooth decay and acne pimple outbursts. If we've evolved so well to assimilate carbohydrates then you would think that modern west european would have less severe effects to those two examples, right? IIRC only about 5-15% of native west europeans don't get acnee during adolescence and that's linked to carb intake.
We're good at metabolizing carbs because it was rare enough to get meaningful amount of it when we chomped on random plants inbetween hunting and foraging runs. Now that we tamed the devil and can easily get thousand of calories worth of it per square meters of farmland, it doesn't take a genius to see that it's a double edged sword. You don't get the same issue with meat and vegs because you'll puke your guts out from overfeeding since your brain will actual send signals quick enough to tell you to stop eating. A 200gr steak most people will feel very satiated for hours after eating, a 400gr bag of crisps you can munch while drinking cola and still feel hungry a few hours later. One is 800kcal, the other 2000 (not counting drinks).
