I honestly have no idea how they prepare meat. I should go ask them tomorrow. Note that they mostly use either rice or corn (or both) when cooking. And of course, as a Mexican, lemon is important in foods. For example, albondigas (meatball soup). They add a lot of jalapenos into the soup and lemon after serving. It's very good and spicy if you're into spicy foods.
