Plants have their own immune systems which become compromised when they are grown on deficient soils. As a result they require pesticides and fungicides just to survive. Then they are picked unripe because they will spoil before they even get to our kitchen tables.
They need 52 different vitamins and minerals to develop properly and provide tasty, nutritious food for our enjoyment. Any commercially grown food is going to suffer from this. Doubly so if it's processed and preserved. The only real solution is to grow everything yourself and learn about plant nutrition. I've compiled some of my resources on this in pic rel.
