In reality if you're talking about medieval (10th to 14th century), the gambeson would be all the way down to the knees (because they didn't invent the plate knee caps (don't remember the name, poleyn I think) and had to protect the from bashing (if you want to bash someone always go for rigid plain bones like the skull, knees, elbows,..)
You'd also have a much thicker neck strip (the most important part to protect was the neck, which is why you also see much much smaller rings around the neck in mail armors) and you'd also want to incorporate all of this with a padded cap and gloves
