Why? They went through a population bottleneck where the only available food (besides meat which they were forbidden from eating) was literal cow dung. Those who could eat the dung survived & reproduced. Those who could not eat the dung died & failed to reproduce. They're much like house flys which often lay their maggots in cow dung around farms, the maggots eat the patty as they grow.
